Spinach Ricotta Filling

Ingredients:

• 10 oz bag of spinach, chiffonade, blanched, thoroughly drained
• 6 large Basil leaves, chiffonade
• 32 oz Ricotta
• 100g (~1 cup) Parmesan, grated
• 2 tsp Onion Powder
• 1 tsp Garlic Powder
• ½ tsp Italian Seasoning
• ½ tsp Nutmeg, freshly grated
• ½ tsp Salt
• 1 tsp White Pepper, freshly ground

Directions:

• Combine all ingredients and fill ravioli, chicken, salmon, or any other pasta or roulade.

Notes:

• ½ batch is enough for six 1” Cannelloni.
